Mambo Italia Executive Sous Chef Job

Responsibilities:

  • Menu development in collaboration with the Executive Chef
  • Ability to coordinate numerous kitchens at the same time
  • Staff training and development within the kitchen
  • Quality assurance and management of food including interacting with guests
  • Responsible for orienting, training and coaching and evaluation of new kitchen staff
  • Ensuring that the (HACCP) is adhered to on a daily basis by all members of staff
  • Inventory and supplies management
  • Seize control of issues in the kitchen

Skills & Qualifications:

  • BS Degree or a diploma in Culinary Science
  • 3+ years experience in a similar position
  • Must have proper knowledge and international experience with Italian Cuisine
  • Excellent record of kitchen and staff management
  • Familiar with industry’s best practices
  • Leadership, Hand-Eye Coordination and Time Management skills
  • Demonstrated ability and experience in overseeing large production and kitchens with over 300 staff members
