Duties &Responsibilities

Menu Development

  • Aid in menu, recipe creation, and costing, based on the profit margins expected in order to give us a competitive advantage within the market.
  • Keeping up with current food trends and making use of locally available ingredients.
  • You’ll incorporate the current menu into a workable, easy-to-execute menu. Making sure the menu is developed is getting the most sales and profit.

Consistency

  • Create Kitchen standard operating procedures to ensure efficiency, and uniformity and establish a benchmark for quality products and services.

Managing the end-to-end operations of the kitchen.

  • Ensure all kitchen staff are trained, and aware of their duties and what is expected of

them.

  • Oversee and monitor the work of kitchen staff to ensure all tasks are done as required.

Managing kitchen stocks

  • Ensure cost control and wastage is minimized by careful supervision of food
  • preparation methods
  • Ensure proper hygienic storage methods are utilized to prevent food loss.
  • Oversee the ordering and control of stock levels

Training

  • Training in: menu execution, Plating, Plate selection, Stock taking, Educating the front of the house on food knowledge and menu.

Supervise the preparation of all food

  • Ensure all food is prepared as per food preparation requirements and SOP upheld.
  • Ensure kitchen staff are working safely at all times, while upholding all sanitation
  • regulations and safety standards.
  • Ensure staff are aware of and follow safe work practices at all times
  • Assist other staff in the cleaning of the kitchen at the end of the shift
  • Ensure his/her own work station is kept clean and hygienic at all times

Requirements

  • Prior experience in working as a Head Chef with a reputed restaurant, or hotels.
  • Exceptional kitchen management skills
  • Ability in delegating and monitoring responsibilities
  • Outstanding communication and leadership skills
  • Up to date with the culinary trends and professional kitchen operations
  • Familiar with computer programs like MS Office, restaurant management
  • software, and POS
  • Trained in health and safety standards
  • Professional degree in hotel management, culinary science, or similar
  • certification
  • Ability to run both a la carte and banqueting menus.
