Chef de Partie Job at Mercado Restaurant

Mercado, a new Mexican restaurant situated at Westlands, Nairobi. We have the following vacant positions:

Duties for the Chef de Partie Job

• To ensure that all stocks are kept under optimum conditions
• To ensure that all misen place is always fresh and prepared on time
• To ensure that all dishes are being prepared to the correct recipe and the correct quantity
• To ensure that all dishes reach the passe correctly garnished, the correct portion and size and presented on the correct serving dish in the prescribed manner
• To ensure that your section is being kept clean and tidy at all times
• To ensure that your junior chefs and trainees receive the right training and optimum guidance
• To ensure that any anticipated shortages are communicated promptly to the sous chef or the head chef
• To ensure that no horseplay is allowed in your section and that all staff under you are treated fairly and with courtesy
• To deputise in the sous chef’s absence and take charge of the kitchen when asked to do so
• To attend training courses and seminars when required to do so

Chef de Partie Job Requirements

• Previous experience in the culinary field required(2 years)
• Diploma Certification in a Culinary discipline an asset
• Strong interpersonal and problem solving abilities
• Highly responsible & reliable
• Ability to work well under pressure in a fast paced environment
• Ability to work cohesively as part of a team
• Ability to focus attention on guest needs, remaining calm and courteous at all times
